Thomas Vincent has lived his whole life within a couple of casts of the drop window — and he treats baking the way he treats fishing: show up every day, keep your hands steady, and let the good ones go where they're needed.

Hometown water

Collegeville raised, Spring-Ford through and through.

Thomas was born and raised in Collegeville, PA, one town over from the fourth-floor window the bites now drop from. He went to Spring-Ford schools from his first day of kindergarten to his last day of senior year — which is why the Spring-Ford Food Pantry keeps showing up as the featured charity.

The fishing came with the territory. He grew up working the Perkiomen, the creeks that feed it, and the Schuylkill itself, and he never really stopped. The reel on the window sill is the same kind of gear he's trusted his whole life.

The uniform

The trout hat goes on before the oven does.

It's not a costume — it's the same camo trout hat he fishes in, and every batch gets baked under it. Ask him why and he'll tell you the two jobs are the same: be patient, read the conditions, and don't rush what's on the line.

Every morning he decides what the night's bite will be — cookies, brownie bites, mini whoopie pies, whatever the bowl says. One small batch, baked fresh that afternoon, on the reel by nine. He keeps none of the money; every dollar given goes to that night's charity.
